Since the 2013 vintage, we have offered our Chablis cuvée L’Incontournable, crafted from carefully selected plots with the finest exposures.
This Chablis, bottled at the estate, is sourced from vineyards adjacent to our Premier Cru plots Les Fourneaux, located on the right bank of the Serein River. Facing southwest, the vines grow in the historic Grande Chaume area.
To show the best of the character of this unique terroir, we have now decided to name the cuvée “La Grande Chaume”, after the traditional name of the site where these vines are planted.
The label retains its signature cream color — only the name has changed.
Vinification: Alcoholic fermentation with no residual sugar, followed by full malolactic fermentation. Aged 30% in Burgundy oak barrels of 227L — 1st, 2nd, and 3rd fill) and 70% in stainless steel vats.
Tasting notes: The nose reveals a refined blend of white flowers, stone fruits, and mineral tones with a subtle hint of spicy oak. The palate is both generous and energetic, with saline freshness and flavors of peach and hazelnut, complemented by the classic oyster shell note so typical of Chablis. The wine balances roundness with minerality, finishing long and vibrant. A perfect match for seafood.
